Smoky Baked Tofu
This gorgeous tofu recipe can be prepared in 5 minutes. It then needs to be marinated for half an hour and baked for 20 minutes whilst you prepare some steamed vegetables or a salad to go with it.
Smoky Baked Tofu
9oz (250g) firm tofu
1 dessertspoon vegetable oil
2 dessertspoons tamari soya sauce
1 teaspoon cider/wine/balsamic vinegar
1/2 teaspoon smoked paprika
Large pinch dried thyme
1 small clove garlic, crushed
1. Cut the tofu into slabs about 1cm thick and place in a bowl. Mix the remaining ingredients and pour over the tofu. Turn the tofu to ensure that it is completely coated in the mixture. Cover and place in the fridge for half an hour to marinade.
2. Put the tofu on a baking tray and pour the remaining marinade over the tofu. Bake for 20-30 minutes at 200C/400F until it starts to brown and crisp. Serves 2.
Variations
*If you can’t get hold of smoked paprika replace it with an equivalent amount of ground cumin.
*Experiment with other dried and fresh herbs such as basil or rosemary.
*If you don’t like garlic, feel free to omit it.
*If you are really stuck for time don’t marinate the tofu in the fridge. Give the tofu several turns to ensure that it is well coated in the marinade.
*Most of the ingredients in this recipe can be switched around to some degree but whatever you do, don’t skimp on the soya sauce because it really makes the recipe.
